What are baked doughnuts? It is like any a quick bread, a baked good made with baking powder or baking soda.  When you bake a cake, you use a round or square pan.  You use a muffin pan and get muffins but as soon as you top them off with buttercream and you will have cupcakes.  The baked doughnuts are the same concept-place the batter in a doughnut pan and you get doughnuts.  Why complicate it?

A couple of years ago, I bought two doughnut pans, I have used them off and on and this morning I was looking at some really overripe bananas.  I knew right then and there that I would re-do my brown butter banana doughnut recipe, but with the help of my six-year-old.  She gets a couple of homeschool lessons in one- home ec (like that’s taught in school anymore), volume measuring, listening to directions, and using her five senses!

These are really easy to make, so if you have kids I encourage you to get them in the kitchen and help you.  And if you don’t have kids, you will be eating these doughnuts before you know it.

 

These Brown Butter Banana Doughnuts are so good filled with nutty brown butter, bananas, warm spices, and a sweet glaze!

In my recipe, you will see that I am using bread flour which results in a chewier doughnut.  You may take out 2 tablespoons of bread flour from the one cup of bread flour and replace it with two tablespoons of cornstarch.

Now, when it comes to glazing these doughnuts, I dip them two times!  I dip all the doughnuts and let them dry and then I do it again, talk about patience!  But after doing it, they look and taste amazing which makes it so worth it.

Brown Butter Banana Doughnuts

Ingredients

For the doughnuts:

  • 3 ripe bananas
  • 1/3 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground cardamon
  • 1 egg
  • 1 cup bread flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 stick unsalted butter

For the Glaze:

  • 1 1/2 cups powdered sugar
  • 2 Tablespoons honey
  • 2 Tablespoons heavy cream
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/8 cup hot water, add more if needed

Instructions

For the Doughnuts:

  • Gather all ingredients and equipment.
  • Place the butter in a saucepan over medium high heat. Melt the butter until the milk solids have browned, not burned. Reserve.
  • Preheat oven to 350ºF. Grease doughnut pans.
  • Place the peeled bananas and sugar in the bowl of stand mixer with the paddle attachment and turn on low until mashed well.  Add the spices, egg, and vanilla.  Mix well.
  • Add in the flour, baking powder, and baking soda to the banana mixture and mix until well combined.
  • Pour in the butter to the mix, be sure to scrape the bottom of the pan to get all the mix solids out. Mix well.
  • Place batter into doughnut pans until 2/3 full in each well.
  • Bake for 10-12 minutes.  Take doughnuts out of the pan and place on a cooling rack.

For the Glaze:

  • Gather all ingredients and equipment.
  • Mix all ingredients with a whisk in a small bowl until well combined.
  • Dip each doughnut into the glaze and allow to dry.  Repeat the glazing the doughnuts one more time.
