Have some overripe bananas? Make these Brown Butter Banana Doughnuts prepared wth nutty brown butter, bananas, warm spices, and topped with a sweet glaze!
Place the butter in a saucepan over medium high heat. Melt the butter until the milk solids have browned, not burned. Reserve.
Preheat oven to 350ºF. Grease doughnut pans.
Place the peeled bananas and sugar in the bowl of stand mixer with the paddle attachment and turn on low until mashed well. Add the spices, egg, and vanilla. Mix well.
Add in the flour, baking powder, and baking soda to the banana mixture and mix until well combined.
Pour in the butter to the mix, be sure to scrape the bottom of the pan to get all the mix solids out. Mix well.
Place batter into doughnut pans until 2/3 full in each well.
Bake for 10-12 minutes. Take doughnuts out of the pan and place on a cooling rack.
For the Glaze:
Gather all ingredients and equipment.
Mix all ingredients with a whisk in a small bowl until well combined.
Dip each doughnut into the glaze and allow to dry. Repeat the glazing the doughnuts one more time.
