Rice Krispies Treats Mickey Style!

For Gabriella’s birthday, I wanted to prepare something that was reminiscent of the chocolate covered Mickey Ice Creams from the park.

I thought of Rice Krispy Treats, but I would add some vanilla bean into it.  Ok, ok, no I didn’t make the marshmallows.  Yes, I know how to make them, yes I know they are easy to do—but with everything else I had to do for the party, plus be a mom and work on my Master’s degree class, where there is a huge assignment do every week!  Forget it, I am buying mini marshmallows!! It’s one day!! As I picked up the pack of marshmallows and read that there is Blue#1 inside! Seriously!  They are marshmallows!! Forget it, it’s only one day.

After I was finished with the fight with myself, I got to work.  You will need pan spray so the Rice Krispy treats do not stick everywhere.  I have been using coconut oil pan spray by Spectrum Naturals.Rice Krispie Treats

Mickey’s Rice Krispie Treats

Prep Time 30 minutes
Total Time 40 minutes

Ingredients

  • 4 cups mini marshmallows they melt faster, compared to large ones
  • 4 TBSP Butter unsalted
  • 6 cups Rice Krispies
  • t half of vanilla bean if you don' have vanilla beans, you can use 2 teaspoons vanilla extract, deseeded
  • 24 oz . of Dark Chocolate for coating

Instructions

  • Gather all ingredients and equipment.
  • Pan spray a 15x10 baking dish.  I used a 3 quart pyrex glass casserole dish that I had on hand.   I have been using Coconut Oil pan spray by Spectrum Naturals.
  • In a large pot over medium low heat, melt butter.  Add in marshmallows and vanilla bean, stirring constantly until melted.  Turn off heat.
  • Add in rice krispies and fold into the marshmallow mixture until well coated.
  • Place mix into prepared dish, pushing down until evenly distributed.
  • If you have another glass baking dish of the same size, pan spray the bottom of it and place it on top of the rice krispy treats to be.  (this step is optional, but I found it works best-having the extra weight on the mix)
  • Pan spray your hands and the Mickey cutter.  Use the cutter to make your Mickey treats and place on parchment lined cookie sheets.
  • Melt chocolate in microwave using 15 second bursts.
  • I used red and white striped straws, for a Main Street USA feel, as sticks to hold the treats.
  • Stick a straw in each Mickey Treat in the middle about half-way up.
  • Coat in chocolate and place on parchment lined cookie sheets.  Allow to set.
  • Stick treats into a foam board for serving.

Instagram post 17873584939512919 It’s the most wonderful time of the year and it calls for Zimtsterne-German Cinnamon Stars! 
I still remember my first Christmas in Germany!  There were the different types of decorations, the Christmas Markets, the food, and the chill in the air!  Fast forward 10 years later and the way I incorporate German traditions and experiences is by making German Christmas cookies for the whole month of December.  Yep, it’s only in December that I make a bunch of different German Christmas cookies and treats and have been doing it since before we had our family. 
Zimtsterne which translates to cinnamon star, are completely gluten-free and all delicious!  It is first prepared by whipping egg whites, salt, and powdered sugar together to form a meringue.  Vanilla is added and then the almond flour, walnuts, and most important the ground cinnamon.  This dough is then rolled out using powdered sugar and cut in stars, which in Germany it happens to be the Star of David.

Instagram post 17860460518534922 Fun, what is that like when you are busy with your kids and maybe you work outside the home too?  I am fortunate to stay home with my girls and along with homeschooling them too.  Maybe you are overly committed to things with your kids from dance, sports, and other extracurricular activities and you feel more like a minivan driving here and there instead of a mom soaking up the time with your children before they head off to college or head into the workforce.  Whatever your situation, life can get the best of us right?  It can become stagnant, full of routines and disappointments and we may even forget who we are.  We would rather choose the never-ending to-do list, scroll through social media, and binge Netflix over playing with our kids.  BUT THIS YEAR IS A TIME FOR CHANGE!  God intended us to live-fully and abundantly.  It means living gratefully, being joyful and hopeful. It means being led by the Good Shepherd and trusting that everything is working out exactly as it should.  May we remember what it is like to have fun in our lives!  It’s not about doing more, in fact it’s about doing less!  For every one thing that we say “Yes” too, we are saying “No” to two things in our lives.
Instagram post 17857743601494054 Try out my chia seed pudding made with coconut milk!  Top it off with favorite jam, granola, and fruits and you have a easy decadent breakfast!  It’s not like your traditional chia seed pudding as I made it more like a mousse. .
My mom was looking for a chia seed pudding recipe and I told her that I had a recipe on my blog.  Well she made it this morning and loved it!

So far we have different herbs, mixed lettuce, and now the tomatoes are coming along with squash blossoms on our zucchini plants.  I used two raised beds and various planters.  Next year we will grow our garden a little bigger! This strawberry shortcake tastes just like my mom made but with a few updates with sparkling sugar and vanilla beans. .
.
The strawberries are macerated with a little bit of vanilla sugar and honey is folded into the mix.  I think the honey really balanced out the sweetness by adding a touch of earthiness-you know just so it isn’t just sugar, sugar, and more sugar, but something else to balance it all out.
