Pistachio Ice Cream Sandwiches
Easy Pistachio Ice Cream Sandwiches made with chopped dark chocolate covered pistachios folded into vanilla ice cream sandwiched between two chocolate chip cookies.
A few nights ago, Victor and I were watching The Sweetest Thing I Ever Ate on Cooking Channel. Duff Goldman came on and said he loves the pistachio ice cream sandwiches from Jacques Torres. The ice cream is made with his pistachio chocolates sandwiched between two ooey gooey chocolate chip cookies. Oh my gosh!! That sounds so awesome!! Whenever we can go to New York City I definitely want to go there, but for now, I want something like that…like right now!
I quickly whipped up a batch of my chocolate chip cookies and then for the ice cream I made life easy for me…I bought some ice cream. Sure, if you have an ice cream machine or even the bowl in your freezer all the time make your ice cream from scratch! But if you don’t have any that, no problem-buy your favorite ice cream and add something special to it! Voila “homemade” ice cream!
And the result? OH, MY GOSH!!! Chunks of chocolate and pistachios with a sweet, touch of sea salt ice cream and soft chewy chocolate chip cookies!!

Pistachio Ice Cream Sandwiches
Ingredients
Chocolate Chip Cookies
- 4 cups Pistachio Ice Cream
- 32 each Chewy Chocolate Chip Cookies
Instructions
Assembly
- Place 1/4 cup of the ice cream in between two warm cookies and enjoy!
Notes
In the original formula, All-Purpose Flour was used, but I switched to Bread Flour so the cookies would be more chewy.
