Birthday Cake Popcorn

White Chocolate, marshmallows, tons of sprinkles, vanilla and almond extract and freshly popped popcorn!

Ingredients

  • 1/2 cup popcorn kernels
  • 4 TBSP coconut oil
  • 8 oz marshmallows
  • 3 TBSP vanilla extract
  • 1 tsp kosher salt
  • 1 tsp. almond extract
  • 1/3 cup white chocolate chips
  • 1/4 cup rainbow sprinkles
  • 2 TBSP rainbow nonpareils

Instructions

  • Gather all ingredients and equipment
  • Pop the popcorn kernels in a large pot with a lid in 2 TBSP of coconut oil over medium-high heat.
  • In a medium saucepan, melt the marshmallows in 2 TBSP of coconut oil over medium heat. Once melted add the vanilla extract, almond extract, and white chocolate chips.  Stir until melted.
  • In a large mixing bowl mix in stages the popcorn, marshmallows, sprinkles, and rainbow nonpareils.
