Anymore it is a lost form of art to break down a cow, pig, chicken, anything. Why do I say that? Look at the grocery store everything is all broken down and we see big companies like Tyson, IBP, or Smithfield have people only break down one part of the animal, like an assembly line and not caring about it.
I know our time is valuable, but so is our money. The cost of food is increasing like every week! It is cheaper to buy a whole chicken than to buy pieces already cut. I also save the bones after I break down the chicken as I will make stock with them.
Prepare your work area with a cutting board and damp towel under your cutting board. Use a boning, filet, or chef’s knife to break down your chicken. You will also need two pans for your pieces-one for the bones and then one for all the meat.
